About E. coli Food Poisoning
E. coli O157:H7 is a bacterial pathogen capable of causing a potentially fatal infection. Symptoms of the illness can include severe abdominal cramps, diarrhea, and vomiting. The diarrhea may become bloody and can lead to dehydration. There is usually little or no fever. The infection (and its symptoms) will vary from individual to individual, ranging from a mild to a life-threatening illness. Some patients may develop a type of kidney failure know as hemolytic uremic syndrome (HUS).
Symptoms of E. coli food poisoning typically begin 3-4 days after eating a contaminated food; however, symptoms may occur anywhere from 1 to 10 days following pathogen exposure.
The USDA’s Food Safety and Inspection Service (FSIS) advises consumers to safely prepare their raw meat products, and to only consume ground beef that has been cooked to an internal temperature of 160 ° F, as confirmed by a food thermometer.
